Spring Foraging - Miner's Lettuce!

On a 14 mi loop around Briones Reservoir, I saw a few mushrooms (a couple candy caps!) and observed piles and piles of Miner's lettuce.  Miner's lettuce is high in vitamin C - and it's pretty tasty.  This Miner's lettuce was unusually big - I'm more accustomed to seeing it around the size of a fifty-cent piece.

  1. Wow! I've never seen Miner's Lettuce bigger then a quarter. This is crazy stuff!

  2. I've seen quite a lot of fairly large Miner's Lettuce this spring - keep in mind that my hand is 3.5" across the widest part and 7.75" from longest finger tip to base of my palm - that Miner's lettuce was 3-4" across!

  3. Let me make that 4-5" after looking over that picture. I was thinking about bringing some home to use for making little spring rolls, actually. :D

  4. This would make a good wrapper for spring rolls. And at that size, it would make a good plate!
